How to remove users from being added to the Watchers list by default?

One of my team member is being added to the watchers list by default for all the issues raised across multiple projects, and receiving email notification for all the issue events / activities.

Hey there!

You'll want to check in the project's notifications scheme, and if it's happening across all projects - check the default notification scheme for your jira instance.  There are groups that can be added as watchers automatically (on issue creation, comments, etc), and it might be they are in such a group.
