The world is using MS Word, Excel and PowerPoint. Its very unlikely that Microsoft will be acquired by bigger company than itself. We will never have to worry about our files. Today, most of the companies are going into mergers and acquisitions. If bigger company acquires Atlassian, the subscription price might be increased and small or medium enterprise won't be able to afford the new price. In that case, how do we recover our entire files and logs if discontinued the subscription? How do we recover our history of JIRA without even continuing its subscription?

it depends what licensing you're using.
On Cloud, if you don't subscribe to Atlassian services anymore, you can do a backup before unsubscribing or download the attachments/files from projects, issues, spaces & pages.
On Datacenter it's about the same procedure: Run backups and/or use some scirpts to download these files for further usage. You'll loose the context, though...
On Server you've got a perpetual license which allows usage as long as you like, You won't get any updates after the support period expires.
Make up your mind, what fits best for you?
You one last remark: What happens, if Microsoft increases the pricing of their Office products so that small or medium companies cannot afford this anymore? DId you think about that scenario? That is one of my fears right now...
