How to make a field non-editable after a specific date

In our JIRA stories, we have a custom field, related to when a story is going into production.

Is there a way to make that particular field non-editable after a certain date, so that nobody can modify that field?

This will help us ensure that no JIRA stories are added to or removed from scope.

Not out of the box. You may be able to do it with scripting, You may want to rephrase the question asking if scripting can make a field non-editable based on date
