Our company had one project on Jira but we have recently added two more.
Our link to access the project's repo was `project1.atlassian.net`.

I think there is some confusion over terminology. "repo" is not a term that applies to the Jira product.
"project1.atlassian.net" is the site where you Jira product is installed. A Jira product can contain multiple projects, each containing issues.
To change the URL of a site you would follow the instructions here:

However, I notice that you tagged your post as using the Free product plan. I don't believe changing the site URL is available in with the Free plan.
Regarding your second question you asked about email addresses for each "product". Do you mean you will have multiple copies of Jira running, each on a different site or are you actually talking about projects within a single instance of the Jira product?

I do apologise for the 'repo' mistake, but did not know what to call it.
So we have a single instance of a Jira product that contains 3 projects.
We have an in-house ticket reporting tool that for each ticket it sends an email to our Jira product.
Now, since our product contains 3 projects, we'd like each project to be able to receive it's own specific tickets when they are reported and emailed to Jira.
I am unsure here whether I need 3 separate email addresses or if we are able to handle each incoming email and direct it to the relevant project (maybe based on the email contents?)
It just so happened that our Jira product was named exactly as our first project (hence the wish to change the name of the product).

Are you using the Jira Software product, the Jira Work Management product, or the Jira Service Management product?
Are the 3 projects Software projects, Work Management projects, or Service Management project?
A Work Management project will have navigation option arranged horizontally across the top of the screen, such as Summary List, Board, Reports, and Project Settings.
Software and Service Management projects have their navigation options arranged vertically in a panel on the left. For these two types of projects also, their type will be displayed below the project name at the top of that same panel.
Processing emails and creating issues is configured differently for Software and Service Management projects.
For Service Management projects each project you create gets its own email address automatically based on the project key for the project.
Since you said the email address you are using is "jira@" I am guessing that you are using the built in Mail Server for Jira.
Can you show us a screen image of the Incoming Mail configuration? This is accessed through System settings. It will help us understand your current state if you can provide the image. You can obscure the specific email address.
By default the configuration is set up just to process incoming emails as Comments that need to be added to existing issues. It sounds like there may have been changes made to your configuration if emails are creating issues.
If you want to route incoming emails to create issues in different Software projects, I don't believe that can be done using just the one default email address. I believe you would have to set up additional Mail Servers to pick up emails sent to a unique email address per project. Atlassian does not provide a mail server where you can create additional email addresses for this purpose. You would have to set up or subscribe to an email service where you could create additional email accounts (like Google). Within Jira you would then have to set up a Mail Server (under Incoming Mail) for each address you want to monitor, and set up a Mail Handler to process the emails and create issues from them in the desired project.

If it turns out you are wanting to create issues in Jira Service Management projects, you don't have to go through that. Atlassian already supports an automatically unique email per Service Management project.

With the above, you have answered my question. So I need to ask our mail server provider to provide an email address for each project, then set them up in the Incoming Mail Handler and select the project I want each email address to represent.
