Hi! I'm site-admin as well as a Jira-administrator. One of our Projects had the default usergroep as access, but that group has been removed. Now even I cannot access the project anymore. Is there a way to give me admin access?

If you are a Jira administrator you can access project settings of any project. Go to cog item -> projects.

Are you sure that you are on Server?
site-admins are available only on Cloud. If you are on Cloud, user the project settings option:

Chrome and IE show the same. The only thing I can do right now is to delete the project.
