How to edit Issue type? Why I'm not be able to edit?

Issue type is not just a field, it's one of the two things that all the configuration hangs off.  Changing the issue type can be a massive task.  You're not just changing a bit of text on a post-it note, you could be trying to change a bicycle into a zebra.

The warning you see here is happening because the issue types are configured differently.  Try using "move issue" instead - that has code that compares the setup of source and target and asks you to fix any incompatible data as you change from one type to another.

I am unsure about this error hence if this is tied to just a single issue type in the project then it is possible there is a workflow property in place restricting who can edit issues.

Check this with your jira administrator (especially if the workflow for the Task issue type is different from others).
