How to change the Description of Original Estimate & Remaining Estimate field for certain projects.

the only way to change these texts is to edit the i18n values in their jar files
e.g. /language_default.jar
You can search for articles on doing this. Note it will apply across the whole of JIRA.
Personally, I did this for one user and it created an overhead to maintain this for upgrades.

Then may be it will not helpful in this case as i need this for only few projects not for entire JIRA.

I read your question as changing the names of the prompt Original Estimate.
if you meant the description that appears below the field, It is set under the field Time Tracking in the field configuration.
You can create a copy of your current field configuration, amend and associate with required projects
