Right now my team is experimenting with Kanban boards and we've successfully been able to add multiple projects to a single board. We do this when we create a new board. However, what I've had a hard time finding how to add new projects to those existing boards we've created. Does anyone know how this is done?

Welcome to the Atlassian community.
When you create a new board from 1..n projects the process creates and saves a filter to select the issues from those projects.
To add more projects to an existing board you need to edit the filter for the board.
Click the ... button in the upper right corner above the board, and select Configure Board.
Select the General tab. You will find on that screen the link to edit the filter query.
If you have Editor rights for that filter you can change the filter, execute the search, and then save the filter. If you don't have editor rights then you have to save a copy of the filter.
If you are forced to save a copy of the filter, you can then, on the above General tab for the board, can change the board to use the new filter you have saved by selecting that filter in the Select filter pull-down.

Can you share with us the steps you went through to update the query, and how it didn't work as you expected?
1. No. You can add any type of project; Team or Company managed, Business, Software, or Service. But the information may be presented differently depending on the source project. And each time you add a project you need to check the Status/Columns mapping to make sure any new statuses get mapped to the correct columns.
2. To access and change a board's configuration you must be one of the Administrators of that specific board. To update the filter you must be the owner or one of the specified Editors for that specific filter.
