I'm using Jira Cloud in my team. Recently the issue view on the boards was switched to a new format. Instead of a side pane it shows a new screen. I cannot edit the Labels field on this view. I could do it in the old view. I switched back to the old issue view, but I have a lot of users on this instance who will ask me questions about that. So how can we add labels to issues in the new view?
I am able to see the "Labels" field. the problem is I cannot edit it in the new Issue details view. When I switch to the old Issue details view, I can do it. I seems it's not a matter of permissions then.

Did you test with the same issue in both views? If so, I would contact Atlassian Support with this: https://support.atlassian.com/

I found the problem. The Labels field wasn't added to the view issue screen. There is a bug in Jira that make this field visible and even editable in the old issue details view, even when it is not configured for this screen.

Great you found the problem. I didn't know that bug.

Have you added this field in the view/edit issue screen configuration?

In the old issue view it will work even if it's not added to the view screen configuration. It worked for me in the new issue view when I updated the screen configuration.

I got the same issue since yesterday. Before the "new" layout worked fine with editing labels. Today it does not. Maybe it's a problem with the latest update?

Using your method, you can access the field, but you can't save new labels or delete existing ones. :-(
