I want to deprecate JIRA tickets on a new project sprint board that I created, however I only have the option to change the status to Done. No action was taken on the tickets.
Check the workflow that is used for the work type, does this have a deprecated status?
Columns in a board can be named as required, but you can only map statuses from a workflow to a column or multiple statuses to the saem column.
You could also look at resolutions, but probably there is no screen set on the transitions to current status "Done", in the workflow this might be set by a pos-function on the transition.
Are you a Jira admin who is able to edit workflow to make changes to the process?

If you go directly to the issue and pull down the Status button is "Deprecate" an option?
Do you know if "Deprecate" is a status available in your workflow?
If the status is not available in the workflow, then it won't be available in the board. In that case the workflow would need to be modified to add that status, and the board would need to be updated to add that status to a column.
It may be available in the workflow, but not mapped to a column on the board. In that case the board needs to be updated to map the already available status to a column.
Rather than have a new Status at all I would recommend that you instead use the "Done" status to indicate the item has reached the end of its lifecycle, and have a Resolution value for Deprecated. Best practice is to limit the number of statuses that represent the end of item lifecycles and instead use the Resolution field to provide more context about the ending of that item.
Using an alternate Resolution value is available currently only for Company-managed spaces. Click the ... button next to the Space name in the panel on the left. Look at the last two lines of the pop-up. Does one of them say "Company-managed"? If not then using Resolution is not an option for you, and you would have to change the workflow to add the Deprecated status.
