How many components can I add into each single project?

It's not limited to any number you'd need to worry about - lots of thousands - far more than you'd ever have any realistic use for.  But I'd recommend splitting the project up if you have a lot, as it'll become unwieldy and difficult for the users.

Thanks Nic! I have another question: Is it possible to add version such as "FixVersion" to each component?

No, versions exist at project level, not component. There is a feature request open with Atlassian for versions of components, but I Don't have the link to hand.
