When I click on the star for a board that was deleted I get the following message:
Over time, I have a few boards where this scenario is the case. They started as Team Projects and when the team released they had features only Company Projects can have, they deleted the boards.
Please let me know if there's a way to unstar deleted boards.

The workaround would be to restore these boards, unstar them then delete them again.
To find the deleted boards:
I tried that but I believe the project was deleted over 60 days ago, so it's not on the list. Thanks anyway.

You've got me quite confused with your question, to be honest. If an item is deleted, it's gone. I was thinking you were talking about boards from company managed projects that had their project deleted and so became orphaned boards. But in a team managed project, afaik there is only one board in a project and I don't see how that could still exist after the project itself got deleted.
I can only imagine that the projects are deleted, but still in the project trash. Another assumption I have is that you say board while you actually are referring to a project. And if that is the case, I would suspect removing the project entirely from trash would also remove it entirely from the menus, including any starring. Or maybe I misunderstood?

You understood fine. The reason I wasn't seeing it on the deleted project list was because it was over 60 days old.
