How do you create a pre-set list of approvers when the field is hidden?

a search shows that you must hide the field, but I require 2 approvals and need to add 3 approvers. However if I hide the field, it only allows me 1 Approver. I cannot find anything that will help me with this, however everything I read says I should be able to just enter my list, once the field is hidden.

If request will go to a pre-set list of approvers

1. Add a user picker custom field to the request.

2. Next to the field, click Actions > Hide.  

3. Enter the users who can approve the request, then click Set. The approvers display in the issue and are notified when the request needs approval. The following screenshot shows how the approvers display in the People section of the issue:

I figured it out, turns out the User picker field has a Single and Multiple Custom field, but Multiple is under the advanced section and is also not the default. Once I re-created the Custom field it worked beautifully.
