How do you build an automation that automatically closes epics once all children are in a done status?
I see that the automations have to start with a trigger and just not sure how to set it up.

Adding on what @Valerie Knapp said, each Jira project also contains the library. You can pick the same automation from there, so you don't have to manually recreate it into your project.
When you open the automations section, it should open directly into "Templates".
In the templates section you scroll down until you find the automation you are looking for
Then, you click on the automation, make the necessary ammendments, click "Turn on rule" and you are good to go!
The only thing you need to ammend in the following:
In the second condition, you need to change from "Subtasks" to "Children". Of course, if you are using different statuses, like "Done" or "Closed", you need to change the status names as well.
