probably you need to hide completed issue in your board. There is a specific setting for that (https://confluence.atlassian.com/jirasoftwareserver/configuring-filters-938845268.html#Configuringfilters-(Kanbanonly)Hidingcompletedissues) - this seetings is the same in server and cloud instances.

You could try adding sub-filter. That's described under (Kanban only) Adding a sub-filter on the page @Fabio Racobaldo _Herzum_ linked above. For example, something like:

Unfortunately, this only remove all done issues from the view, but the option to manually clear them is not appearing.

Ah, I think your screenshot above is for a team-managed project, I don't see that option on my company-managed projects. When you're looking at a scrum/kanban board, look at the bottom of the left nav bar, and you should see whether you're looking at a team-managed project or a company-managed project.

For company managed projects, you can only set a timeframe in Configure board/General/Completed issues (last option in the page):
