Just looking at your video, I am afraid there is a lot of things you will need to dig into before you will be able to get all the benefits from the tool.
Just some practical things about the issue you showed: the categories you refer to - like postponed - are not categories, but statuses in a workflow. And the boxes you created on your board are sprints, meant to be used as timeboxed, prioritised bodies of work that you start working on one at a time. The view you shared in the video is the product backlog, which shows the issues of the first status in your workflow. Postponed is a status that comes later in your workflow, so it is totally normal that issues in that status suddenly disappear from your view.
Before you try to start using Jira, you must indeed take the time to understand what it does and how it works. I can try to point you to some very useful resources, that are all available for free online:
There's a lot more, but based on the struggles you shared, I guess these should already give you a head start towards what you are trying to achieve.
Getting started with a new tool, specifically one that has a lot of capabilities, can seem challenging. Do take your time and hang in there.
Also, especially if you are tight on budget (but even if you just like to speak to other Atlassian users in your neighbourhood), consider checking if there is a user group in your neighbourhood: Atlassian ACEs. These gather on a regular basis to exchange ideas, help each other out while having pizza and beer (or something else of course).
