Hi Alexa,
Do mean undo any changes inside a JIRA issue? If so, the feature isn't available at this moment. In the meantime, If you would like to refer small changes and revert them, the history tab would be able to help to track on previous those value. However, if there was a big changes recently that you would like to revert to. I would recommend for you to restore from previous Cloud backup if there was a backup generated. Just to note that I've raised a feature request few years ago however, there wasn't alot of traction, here's the report if you are interested to watch: https://jira.atlassian.com/browse/JRACLOUD-61161.
