How do I set up Jira so that the default option when creating a task in the default window is set to creating a task rather than a story?

You can set the default issue type of you go to Project settings > Issue types and click on Action > Edit issue types. Once you set the default issue type, do not forget to hit Save for the change to take effect.

Thank you, I repeated this action on several projects, but when creating a task for a project, it still offers a story, not a task.

Setting the default issue type will only affect the first time you click on create. The next time you click on create it will remember the last issue type that was used, which is expected behavior. There are two suggestions that you can vote on to change this behavior, JRACLOUD-74771 and JSWCLOUD-17743
