Hello Cristiano,
If you are using Portfolio 2.27.0 or earlier the new planning experience is still early access and can be disabled under "Portfolio Administration >> Portfolio for Jira early access features" here:
However if you are using the latest Portfolio 3.0.0 release the New Experience is out of early access and the new planning experience is native functionality and cannot no longer be disabled.
