How do I query the metadata?

I have a GUI that I can click one table or view at a time and see all the metadata for that object, but I want two specific fields for each and every table in my environment.

Could you explain more please?  What do you mean by "Table (in Jira)"?  What is this "metadata" you are looking for?  Project?  Issue type?  etc?
