So let's say I have following string in my clipboard "Hi @someuser, how are you doing"
This user "someuser" is actually exists. How do I convert a string to an actual mention format?

When mentioning a user, currently, it's necessary to type @ and then search for the user and click on their name.
Previously, on the old issue view, it was possible to use the wiki markup to mention someone, so we could, for example, use plain text like [~username] and when saving the comment, it would turn into a link and the mention would work, but on the new issue view that uses Markdown and since the usernames were removed, this is not available anymore.
So, if you have a template with the mention already set, it won't work, it will be necessary to type @ again in order to find the desired user and for the mention to work and for it to generate a notification correctly.

Do you guys have any plans to bring this back at some point?
I have a lot of templates with the case. So every time I do copy+paste I need to manually convert the name to "mention" . That dramatically complicates my work flow.

I'm sorry to say, but I'm afraid that there are no plans to bring that functionality back.
The new issue view was introduced a while ago and next-gen projects, for example, have no option to use the old view or wiki markup editor. Also, about the usernames, it was removed due to GDPR and it won't be reverted to what it was.
