How do I give a user permission to access only one project?

Hi I would like to grant user external access to only one project in JIRA. However we use SSO to grant access to JIRA , which by defaults grants access to all projects. I have gone through a bit of documentation but have not been able to get a solution. Any help would be greatly appreciated.

If the user is a member of a group like Jira-users and that group has permissions to each project then they will have access to each. Check what if any group they are members of and remove them. Create a restricted group, place them in that group and set permissions for that group to only the project(s) desired.
