How do I create a filter to see tems where a custom field has been updated within the last week

I want to be able to see all issues where a custom field has been updated within the last week or day.

Unfortunately custom fields do not support the CHANGED operator.

There is an open request for this. There is also a workaround mentioned in the comments.
