I would like to be able to categorize the time someone spends on a ticket. Ex: QA, Coding, Design, Code Review, etc. We have more than one person spend their time on a ticket and would like to know how the time is being spent.

You can not do it out of the box.
You should install the Tempo Timesheets add-on. You will be able to add attributes to your worklogs.
