I'd like to add a Fix version or Release column to Backlog table to plan releases. It doesn't show up among fields that I can check / uncheck for the view and I can't find a way to add additional fields to those. Any advice will be greatly appreciated.

What type of project does this concern? Get that information by clicking on the ... button next to the project name.
It is not possible to add a "column" to backlog screens, but for Company Managed projects it is possible to add up to three fields to the card displays in the backlog.
For Team Managed projects there is no option currently to make additional fields available.
In boards associated with individual projects where Release values have been added to the project you should be able to display a separate panel showing the Releases by clicking on the Versions pull-down.

There is not a single-button "change the project type" option available in Jira Cloud.
To change from a Team Managed project to a Company Managed project would require creating a new, empty Company Managed project and moving your TM project issues to it. Before moving them you would have to customize the workflows, screens, etc. to match what you had in your TM project. There is risk of data loss when moving issues from a Team Managed project to a Company Managed project. More information on this topic can be found here:
However it may not be necessary to change the type of project you are using.
To be clear, the Versions panel shown in my previous reply is available in both Company Managed and Team Managed Software projects.
What problem are you trying to solve? Do you not think the Versions panel would be sufficient to solve the problem?
If we understand the problem you are trying to solve we might be able to advise you about a solution that doesn't require changing the project type.
