We have just completed our trial period for Jira and have lost Epic and other settings that we need. Since we don't have any production information we need to retain in the database is there a way to reset or reload the data to its' original configuration?

Have a look, maybe you have a backup, which was taken right after installing Jira. By default Jira takes backups and put them into the JIRA_HOM/export folder.
If you have a backup, you can restore Jira from this backup.
