I want to hide one of tab from a group of my users by selecting the security level.
How can I go to select this condition?

That's not possible, I'm afraid. Issue level security is the most detailed level of security you can apply inside Jira. This gives you the ability to hide (entire) issues in a single project for users by assigning a permission level to the issue. You can unfortunately not restrict fields on a screen using that same method.
As a workaround (in company managed projects), you could consider working with the issue screens in your project in combination with your project workflow. In short:
In project settings > issues > screens you should see that an issue type is associated with up to 3 screens: one to create, one to view and one to edit the issue. On top of that, you can associate (different) screens with each transition between statuses in your workflow. Such transitions can be defined from and to the same status (e.g. from In Progress to In Progress). A possible setup is this:
This approach is quite complex to set up and is most commonly used to restrict editing of certain fields rather than viewing them. And also for users it is not very transparent, as they need to take action to unhide the hidden fields every time.

In Jira, it is not possible to natively hide specific tab groups (field tabs) on issue screens for particular users out of the box. The standard functionality of Jira does not offer a method to manage the visibility of screen tabs or fields based on user roles or groups directly.
You can use Issue Security Schemes to limit access to specific data or fields by user role. While this doesn't hide fields in the UI directly, it can restrict access to issues based on user roles, making certain fields less visible.
