I found some older posts that mentioned that info was on the footer, but that's not longer true.
It can still be in some versions, but it is also stated in all versions "Help -> About"
Except Cloud Jira, as Cloud versions are irrelevant, it's a rolling "always up to date"
It's funny, I've been using JIRA for year, and never knew that you could access the version that way!

I think it appeared in version 2, but it's very rare that people read "help about"!
Have another look and see if you can find the list of developers. You'll see why I mention it when you get there (and it's very different in versions 3, 4 and 7 if you want to dig out some old installs)

I just asked one of our IT admin and he told me we're on cloud, the newest version available. The reason I was asking is because I'm looking into some integrations and some vendors don't support next gen. How could I have found out on my own that we are on next gen?

All you needed was to know you're on Cloud - everyone has Next-gen on Cloud.

We have cloud but there seems to be different versions of Jira, such as Premium and Enterprise, which will determine the features you have available. How can you find that info?

So while the versions of the software are useless information, your level of usage is not. Annoyingly, the help -> about doesn't tell us that.
Your site admin can tell you what licence level you have, and that should tell us what functions you can use. The most important ones are probably "free or starter, standard, and premium" (There are others, but they don't matter much as we can say that they work like the main three)
Premium means you have all the functions of Cloud for that application, Enterprise means you have the same, across many sites.

Not sure which platform are you using but basically it should be available on top menu (Server) .. Help icon > About Jira (on Cloud it would be left menu) or view System Info (Server only)

You can look in the system information.
Click the "." button and type in "System Info", or navigate to "Administration"->"System"->"System Info". You'll need to scroll down a bit, but if you search on the page for "Version" you'll find it pretty quick.
You also might be able to look underneath "Latest Upgrade report".
