I can see for an individual issue, I can export in word or xml.
However, I want to export the issues to an Excel with all the fields I created.
I cannot find there is such menu item.

I believe you can achieve this by way of the Filter screen. Within this screen, you can filter your data based off all types of fields (to include statuses) using the dropdown functionality or using JQL. From there you can also add columns to your view so you get the data you want in that report. Once you have the view to your specifications, you can export to a wide variety of formats - to include Export to Excel CSV (current fields).
