In the Jira documentation I found that the email notifications can be customized: http://confluence.atlassian.com/display/JIRA043/Customising+Email+Content

Can this be done on the Jira studio instances as well?

Unfortunately, since this feature requres changes to files on the file system, you cannot do this for JIRA Studio.

Take a look at https://jira.atlassian.com/browse/JRA-7266 and https://studio.atlassian.com/browse/JST-1791 and vote on them!
