How a "committed" is considered in Jira?

Hi,

I have planned the sprint, and kept all stories in the sprint. When I start the sprint, I have mentioned the start day as the previous day.

How my committed stories be considered?

Will it be the list of stories placed in the sprint at the time of clicking the start sprint?

or

will it consider the stories only that are present during the previous day?

The items committed to the sprint are the ones you had in the sprint when you started it, the 'start date' on a ticket doesn't affect the sprint itself.
