In our Issue Layout we have three `numeric` Custom Fields named:
- Estimated Story Points
- Remaining Story Points
- Actual Story Points
however, we would like to "mark" the "Remaining Story Points" Custom Field as the field to use for showing the Story Points on an Issue in the Board and in Reports.
Is there a way to define which Custom Field JIRA uses for showing the Story Points in the Board and Reports when there are multiple `numeric` Custom Fields?

If "remaining story points" is what I think it is, then you absolutely can not use it as a Story points field for a sprint estimate.
The name implies that the value will reduce over time, and that is not how Scrum works, it will break all your reporting, boards, velocity, and the rest.

Are you working with a Team Managed project or a Company Managed project? You can find that information at the bottom of the panel on the left when viewing the agile board for the project. You can also find it in the Type column on the View all projects page under the Projects menu.
If you are working with a Team Managed project the answer is no. Such projects only recognize the Story point estimate field as the story points field to use in the built-in board and reports.
If you are working with a Company Managed project then the answer is yes. You would go to the Board Configuration > Estimation page and select your custom field as the field to use for the Estimation Method.
