Helpdesk ticket assign to project

I want to create a Help desk workflow where a ticket coming in and it can be assigned to a project. Is it possible to set a status to have a drop-down that will list all projects and allow the project to be select and routed to the correct project? Can anyone point me to some documentation on how to accomplish this.

The project is the first thing a human has to select for issue creation, as it defines what issue types, fields, workflow etc are chosen.  I'm afraid there's no way to work out the project later - even if you could put it on screen low down on the create or even automate, you're in a place where people might enter data, and have their entries wiped out when a project that does not have the fields they have entered is chosen.
