Help required in setting up the Jira instance.

@Mark Segall - Please could you help me with your inputs on the below. 

I've been tasked to create a work management tool for my current organisation. From my past experience working with Jira, if have suggested to use Jira to meet the ask. I'm currently working a POC to help my leadership team understand the Jira implementation and roll out plan. I need some guidance in creating projects in Jira based on my current organisation design. As highlighted in my previous post in Jira community, we have total of 150 users. We have multiple work streams like SAP Center team(20 members), Applications Team(7 members), Infrastructure and Networking Team(20 Members), Basis(3 members) etc.., All the teams work independently with dependencies in few areas of the work. Considering the limited resource strength, we don't have a ring fenced teams working on each projects. Our current working model is that each team will work on multiple projects. So, I feel we don't need to create Jira project for each of our project, instead we can create one project & create boards for various teams (some team work in scrum & few work on Kanban) who work on various projects. 

Request your guidance on how to approach the Jira set up for my organisation.
