I'd like to sketch out a scenario:
My customer asks me: 'Hi, can't we do this in Jira Cloud?'
'Well, we can for sure check it out. There is this handy 10 users free plan.'
1. I create an Org 'ACME Test corp'.
2. I create a jira site: 'theirprojectinjiracloud'
3. I configure the workflows and issues and what ever else they wanna try, maybe adding some apps.
4. I do not verify the domain.
5. I invite them.
6. They test it for some time and go: 'We really like it, but there is a problem!'
....?
'We kinda use it produtive-ish already'
Now the questions I have in this context (asking for a friend):
1. Is there a way to hand it over?
"This" either being the whole org, including renaming it, or only the jira site in it, including renaming it.
2. Is it possible to move sites from one org to another? In case i'm lazy and skip step 1 above and start with step 2. Renaming the site seems to be an option, i saw.
There is a chance that the scenario includes an even bigger unit at the customer which will eventually create the big, official org on atlassian.net. So renamed 'theirprojectinjiracloud' needs to go there later. Tiny chance.
I'm happy to go through the relevant documentation myself, if only someone would be so kind to point me to it.

You can hand over the entire Organization by making another person an Organization Admin and asking them to revoke your Organization Admin privileges. You will want to make sure that the you are also replaced in other contact/admin roles like Billing Contact, Billing Admin, Technical Contact, User Admin, etc. to ensure they are fully responsible for the environment and you are not. Also ensure that you have not provided your own credit card information anywhere for billing.
If you want to give them ownership of just one site, you can transfer the data for an entire instance to another instance. Refer to
Transfer data from one Atlassian app instance to another
It can be another site within the same Organization or another Organization. Note that there are limitations/caveats to that process when third party apps are involved, so review all the documentation carefully.
If it's a single site, you can invite your customer and make them admin. Afterwards they can remove you as admin, and they become the "owner".

You refer to the org-admin role? Effectively handing over the whole org?
Do you happen to have insights in the moving-sites-from-org-to-org issue?

I don't think you can move sites from org to org.
However you could make a backup, and import it into a new customer site. In theory this would recreate everything in the new site.
