I'm looking for what Jira can best offer to manage sensitive data related to the analysis of a ticket (description, attachment, ...)
For example, I would like to know if in Jira we can automatically archive tickets (in a given project for example) based on date and status criteria ?
and if we can put in place automatic delete of tickets based again on date and status to fulfill GDPR requirement of maximum conservation period ?

You may want to check out this related thread which describes how you can automate deleting information after a certain amount of time.
Archiving issues or projects is not something that can be automated, afaik.
