Filter issue type "Bug" from burndown chart

My team records service desk escalations as bugs in the current sprint. While this gives us good insight into how much work is completed outside of a planned sprint, allowing us to better plan, I cannot figure out how to filter issue types of "bug" from a burndown chart so our burndowns are irrelevant at this time. 

How can I filter a burndown to only show completion of planned sprint activity?

You would need to filter them from the board.  They're not part of the sprint, clearly, so you shouldn't be including them in the sprint data (i.e. board)

What type of project are you using?  (Look to the bottom left of the project display for "team managed" or "company managed")

Company Managed. I'm new to the organization and an Admin in Jira.

Do I need to edit the JQL query to only include issue types story/task/sub-task? If I do that we can no longer see bugs on the board with that filter. I assume we will then need to switch between filters depending on if we are working or trying to report?

That's correct, if you edit the board filter, you can exclude the bugs.  (Rather than "and issuetype in (story, task, sub-task)

They won't show on the board or count towards your sprints if you do that.

It's not a case of switching filters, you need to use separate views (boards are one type of view) - the board filter is defining what can go into (and has been in) your sprints.
