Does anyone have any idea why the fields shown on the 'create issue page' in the Mobile (after the plus button) is not arranged in the order I set in the scheme?
(On web they are well arranged).

Testing using the details you provided, I was able to check that on the iOS app, the fields will be ordered alphabetically and on Android, there is no specific order.
Since it doesn't follow the same order as the screen scheme and there is no option to edit the screen on mobile, we created a feature request suggesting that the custom fields follow the same order as the web version:
