The goal:
To know if I exceeded the working time for each employee.
For example: an employee is expected to work 100 hours a month, and that employee is assigned twenty tickets in the next sprint. I want to know if I exceeded the employee's monthly working time.

Planyway extension has the workload functionality and I believe it might be helpful:)
Based on the Jira Original estimate field and daily capacity of a team member, you can visually manage the workload on the timeline. The workload indicators will help you see if you are exceeding the maximum working hours or have free hours to be taken.

Another option would be our Jira cloud app Quick Filters for Jira Dashboards.
Our app provides you with multiple dashboard gadgets that resemble Jira standard gadgets, but with some advanced features.
E.g. it is possible to sum up any number field with "Quick Two Dimensional Statistics" gadget, "Quick Issue Statistics" gadget and "Quick Pie Chart" gadget.
In the screenshot you see an example how you could configure the "Quick Issue statistic" gadget. As mentioned, every other number field (including custom fields) is also supported.
