Necesito saber si volvió a estados anteriores y cuantas veces sucedió.

Para obtener los datos que desea de Jira, debe utilizar una aplicación de mercado de terceros.
Timepiece - Time in Status for Jira, desarrollado por mi equipo en OBSS, es la herramienta que recomiendo encarecidamente. Está disponible tanto para Jira Cloud como para Data Center.
Time in Status tiene principalmente varios tipos de informes de tiempo (que muestran cuánto tiempo pasó cada problema en cada estado, asignado o grupo), pero la aplicación también tiene informes de "Status Count" y "Transition Count". Estos informes muestran cuántas veces cada problema utilizó cada estado y cada transición.

Is Deiser gone? or will be gone once "use old search" is discontinued? How do we export transitions? I'm a lowly user, not a site admin.

If you rely on native Jira, I'm afraid you'll have to look at the issue history of your issues and basically do the calculation yourself. You may be able to do some magic in Jira Automation, but I can't advice on the details, and given your specific requirements, I assume it would be pretty tricky.
As you surely have noticed by now, there are a number of apps from the Atlassian Marketplace that operate in this space.
E.g., I believe that your use case would be easy to solve using the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a number of so-called history columns that aren’t natively available, including number of times in [status], number of transitions from [status] to [status], time in [status], and many more.
With these, you can build a view like e.g. this in just a couple of clicks:
(This is focusing on the In Progress status, but you can configure any status(es) that you want.)
As you can see above, you can easily sort and filter by the history columns, and also use them across JXL's advanced features, such as support for (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting.
