Epic Status - change to in-progress

I know the epic status is different from the Issue type of epic's status.  And I know you can mark and Epic status to "Done" from the epics panel, but you cannot change the epic status to in-progress anywhere unless you add the epic status field to you screen, but  based on the description associated with this field "Epic status field for Jira software use only", it implies it should not be added to a screen and manually manipulated, but rather somewhere in the software this field is getting updated.

Where is this field being updated to "in Progress"?  I understand that both the epic burndown and control report use the epic status field and to function properly, the Epic status needs to be in an "In Progress" state at some point in its lifecycle.  I cannot find any documentation and have been searching everywhere, on how this field is "Intended" to progress through to do, in progress and done, where I can only see how to mark it as Done from epics panel.

I have seen all the articles on adding a post function, which is fine, I just want to know, is that what Atlassian intended, or did they intend for us to add the Epic status field to our epic issue type screen and have users manage it through the drop down.  and if we were to add it to our screens, why does the description suggest we should not touch it, as some process will move it along.

So besides trying to get a clear answer on how the epic status gets put into in progress, I would also like to understand what reports and how this field is used to calculate what (Hoping you could share some links on that)

 

I would really appreciate an answer, I have been searching for days for clarity, before I just add the workflow transition.  Should we have all along added this field onto our screens for editing?
