I think this is not something you can fix from Jira.
The email or user record has a broken internal start date stored in Atlassian’s backend. Even though the Start Date field is not visible in the UI, Jira still validates it internally, which is why you get the error and can’t delete or recreate the email.
There is no workaround using admin settings, API, or automation.
Only solution:
Raise a ticket with Atlassian Support and ask them to reset the internal start date or unlock the email record.
Looks like validation on workflow or automation rule that send mail to you. Did you check workflow and rules?
