Hi there!
Brand new to Jira and exploring Kanban boards. I have two quick questions.
1. Can I create a new issue on a KanBan board via email?
2. Can I create an email once an issue has been pushed to the "Done" column. I've looked through the notifications but don't see anything specifically related to when it hits done, just "issue move" type thing.

2. Yes! You have two options.
In Notifications the Issue Closed or Issue Resolved events might serve your purpose for sending email when an issue is put into the Done column.

Also, you can use Automation for Jira to send an email for specific issue transitions.
