But then not on other boards. How can I configure it to appear like this at all?
What "option" are you talking about here? There's a lot of stuff in the screenshot and you have not told us what specific part you are looking at (notably - there are no "drop-down" things on that screen at all)

Whithin "Historia 1" i have two subtaks : [BACK] and [FRONT] and thanks to the dropdown I can see them in the Backlog.
But..on other boards, this does not happen. That arrow doesn't appear to me

In the last image, you can see how that story has subtasks ... but, unlike the previous one, it doesn't allow you to expand the story to see the internal subtasks.
I don't know if it's a Kanban board functionality or I can also have the "expand subtasks" functionality in a Scrum board.

So you're looking at two different places for this? And asking why one place that doesn't work with sub-tasks is not displaying them whereas another that does work with them does display them?

Nope, they are two boards within the same project.
The question really is if I can enable that functionality in a Scrum project to be able to view the subtasks.
By working in one site yes and in another no, I understand that either it is something specific to Kanban boards or it is something that can be configured.
So my question is, can that option be configured or is it just something typical of Kanban boards?

No, there's no function in Scrum for that (because sub-tasks are irrelevant noise in the backlog)
