We are using the agile template. When we mark tasks as "Done", they get grouped as "In Progress". When I try to change the attributes of "Done" via 'project settings' (second screenshot), i see nothing valuable I can change.
How can we ensure "Done" is getting grouped as "Done"?

Is this a Team-managed or Company-managed project?
It looks like the Status got created with the wrong category (using the In Progress category instead of the Done category).
If Company-managed, go to Settings > Issues > Statuses. Find the Done status and click on Edit. Then change the Category to Done.
Thank you! This helped uncover the issue, but weren't the exact steps we needed to take. I was unable to find a "Done" status.
Instead, from any affected task, I needed to click "View Workflow", then "Edit Workflow", click "Done" ans select the category "Done".

How about other crew board workflow on this ?
Can you please double check that the workflow for your project includes a transition to the "Done" status and that it is correctly configured to transition issues to the "Done" status when they are completed
Hopefully you are aware to check the workflow transition - in may be controlled by org admins:
Check Transitions:
Review each step/status in the workflow to know there is a transition to the "Done" status.
Look for the transition arrow leading to the "Done" status from the previous status
It could be
Ready for acceptance / In Progress
