I am preparing for a certification and this was a topic.
I cannot find the documentation anywhere. What are the technical/non-functional differences between Kanban and Scrum boards.

Kanban boards don't have a Backlog by default. All issues would be visible on the board. You can create a Backlog by assigning one or more statuses to the Backlog in the Board Settings. Once you do that you will be able to see "Backlog" in your sidebar. You can do sub-filters on the board and also determine how long to show completed issues.
Scrum Boards will have a Backlog by default and will also include Sprints. All issues will be in the Backlog until you add them to a Sprint. There are no issues viewable on the Board until a Sprint is created and Started. A Sprint is a timebox (1 week, 2 weeks, etc) and those dates are entered when creating or starting the Sprint. When you Complete a Sprint you will be asked what to do with unfinished work in that Sprint. You can move it to the Backlog or add it to the next Sprint.
Those are the main differences between the types of Boards.
