I have one developer who is able to update the status of the issue to 'In Progress' on the Issue but then the Issue disappears from their list and on the board. However I can see it on the board and other developers can.
What is causing this and how can I resolve as it isn't affecting other developers. The workflow status is set to transition for all.
They do get this message as well.

It sounds like maybe a couple of things going on here or at least a few things to check/clarify. First let me clarify if the following statement is true - you are able to drag an issue on a board to the “in progress” column but your colleague cannot.

In workflow maybe you define on some of transitions that just a specific roles can transit (if your developer see the issue but can't transit that). If your developer can't see issues in specific status it maybe cause of configuration board. you can click on board button on up right side your screen and then click on configure and then at the left side click on column and you can make your status visible in your favorite column.

I haven't defined any transitions for specific roles, how can I double check this?
On the column management all statuses are mapped on the board configuration.
I should have mentioned that I have a few status mapped to In Progress and they can see issues in some of the status but not one of them.

in which view do you see board? kanban, scrum(sprint view or backlog)? if the type of issue is sub-task, you can't see that in backlog view.
