Hey, my project was deleted and I did not access the email when they communicated it. How can i retrieve it as it had key information about a new business. Also, is this even GDPR complaint? They remove projects as they wish… I must have right to access all this data!

Projects are first moved to the trash for a period of 60 days before they being permanently deleted. Did you check the trash?
Settings > Projects > Trash
If it is not there, you should search Backup/Recovery app that provides restore.

Yes, you can — but only under certain conditions.

I am unable to see the trash. Whenever I found it in Jira or Confluence, it is empty. So this company will not help me fix the issue then?

I believe I was made an admin. Either way, even the first person who created this is unable to retrieve any files.

or whoever you guys for sure that person have admin permissions (Atleast Product Admin)?
