I have read the advanced use of issue collector but since I am new to JIRA it is difficult to understand. We are going to use our JIRA support to help us set up the JIRA customer service. I wanted to know can we have customized fields displayed when we click on the link provided to collect issues?
Will that be able to include the drop down menus?
I am trying to compile a list of requirements and need to know if issue collector is capable of providing this.

The short answer to your question is: Yes. Issue collector forms (In JIRA Server or Cloud) can be configured with some drop-down fields if you are meaning Multi or Single select list custom fields in JIRA.
Indeed, there are some custom field types that can not be displayed in Issue collectors since they cannot be displayed to anonymous users. The fields types that can be displayed are:
P.S: The Fields must be added to the Screen of the project and be visible in order to display in the Issue Collector.
