I'm fairly new to JIRA - So I apologise for the newbie questions.
1) Is it possible to create the following topology
EPIC
Story, Story
Bug, Bug, Bug
Sub-bug, Sub-bug, Sub-bug
In my current setup, I'm not able to create a Bug under a Story. I'm only able to create a Sub-bug or sub-task.
2) If Point 1 is not possible
Is it possible when clicking "Create issue" to have the option to link to a story and by ticking "create another" keeping that link without re-selecting it for the next issue?
Currently, my only option is to create an Epic, put an epic link into a story.
Then I create a bug. Once the bug is created. I go into the bug click "more" > Click "Link" and find the Story I want to link my bug too. This is quite an irritating process.

No. The hierarchy in Jira Software is Epic, Issue and sub-task.
You will need apps if you want to allow more complexity. Be warned that if you do add more complexity below Epic, most people will get confused by it and you usually end up in a complete mess.

No, you need to be thinking about the links you enter, not just linking everything automatically.

As @Nic Brough -Adaptavist- rightly mentioned, it is recommended to keep the hierarchy as simple as possible. Plugins like Structure can help you to achieve the hierarchy that you are looking for, but would make it more complex. A well-planned linking between issues should help ideally.
